The Christmas gift is a tradition at the Hotel BelleVue . To keep it a surprise, it changes every year. In 2021, it was delicious and indulgent, and the bag of candied orange peels seemed to be a hit!
It is true that these golden sticks coated in crystalline sugar are reminiscent of the sweets of our childhood... And then, from North to South, and even more so in Provence, the Christmas table is adorned with the colors of candied fruits.
Real know-how
True expertise begins with the choice of product, so the small oranges must be from the South and untreated. Furthermore, the proportion of sugar is carefully measured, but above all, patience is essential because the cooking and drying processes are long. And there you have it! A lovely bag of sun-drenched candied orange peels, prepared by the Chef of La Caravelle restaurant, ready to be enjoyed!
From anti-waste to pleasure
What could be more natural in an eco-friendly hotel than using the peels from the freshly squeezed oranges at breakfast to make delicious candied orange peel for our guests? Every morning, our breakfast preparer lovingly squeezes fresh oranges and cuts up the peels, which our Head Chef then cooks.
Of course, like so many preparations, this one also has its history , which dates back to the Egyptians, since they preserved their fruits in honey.
